Pedro Moñino and Ana de Viñas set up in a former 19th-century dairy on Carrer del Consell de Cent. The menu leans heavily raw, with most dishes assembled to order. The signature bikini — a truffled steak tartare sandwich — is legendary. The classic steak tartare with roasted bone marrow is extraordinary. The technique is obsessive, the ingredient sourcing meticulous, and the concept stripped of pretension. Industrial-chic décor in the old lleteria.
