Espardenyes (sea cucumbers) — recurring Perez signature; in one iteration paired with amanita caesarea mushroom. Sea urchin two ways: in a glass with tomato, and shaped like butter with caviar. Lobster salad with tomatoes and coral. Sole meuniere with codium seaweed and shrimp dumplings. Saturday rice with lobster — the dedicated Saturday afternoon rice tasting.
