Bun Bo Vietnam sits on Carrer dels Sagristans, a narrow street behind the Gothic cathedral, and does the uncommon work of being an actual Vietnamese kitchen in a city where pan-Asian pho stalls still dominate. The pho is the headline — slow-simmered beef broth with star anise, cinnamon and ginger, served over rice noodles with the correct garnish tray of herbs, lime, chili and bean sprouts. The caramelised spare ribs are the other reason regulars come back: sticky, deeply savoury, slow-braised in fish sauce and palm sugar until the meat yields with a push of the fork. Bao buns, spring rolls, vermicelli salads round out a menu that stays close to tradition. The €10 lunch menu is standout value for this part of the city. The crowd is predominantly foot traffic from the cathedral and can affect the kitchen's consistency on the busiest services, but at a quieter hour the best bowls are genuinely good.
