Rafa Peña built Bar Torpedo as a bar first — a place to drink well — and the food exists to earn that drink, not the other way around. The burger is the headline: aged Galician beef on soft brioche with gouda, cheddar, housemade ketchup, and pickles — the kind of thing that makes you wonder why anyone bothers with less serious beef. The Kentucky Fried Guatlla and the tongue pastrami sandwich show the same instinct — greasy, deliberate, unapologetic. The wine list leans natural, the beers are craft, and the room at eight any given evening is full. The all-green interior, designed by Maite Fuentes of Alapar Estudio, is unmistakable from the street. Same suppliers as Gresca, same instinct, in a much rowdier setting.
