Tr@mendu in Sants has grown quietly into one of the most complete dining experiences in the barri under Jordi Marzo — a vermuteria that opened in 2017 and has since spawned a full restaurant (Encenem Els Fogons) and a charcoal grill (El Caliu De La Brasa) next door, each concept distinct but sharing the same sourcing spine. The suquet de rap here is standout — rich, precise, the kind of dish that justifies a detour across town. The entrecot matches it. But the starters set the tone: paper-thin fried pork cheek, a mushroom bomba with real depth, a leek purée that punches well above its weight. The wine list leans heavily Catalan with excellent price-to-quality throughout, and the house pours vermut from Fot-Li de Reus with the proper ceremony. Service is polished and attentive without stiffness. Sants keeps the room mostly local — visitors are rare, which tells its own story.
