Tordelli lucchesi with Tuscan ragù; pappardelle with wild-boar ragù; carbonara done classically without cream; bacalao al guazzetto; seada della Sardegna for dessert. Tagliatelle de Sandro with asparagus, truffle, and egg; stracciatella di burrata with prosciutto; salmon mi-cuit with watercress cream; tagliata with Paris butter.
