Kim Díaz — the same operator behind Bar Mut across the street — built this bocadillo bar on Pau Claris around a Spain that still exists in photographs: sharp uniforms, cambrers over fifty pouring vermut at noon. Chef Víctor Lema cooks out of Bar Mut's DNA, which means the calamari baguette that has developed a serious following, the oxtail sandwich arrives with spicy mayo and parmesan, and the kokotxas land over seaweed instead of the usual salsa verde. Bread comes from Forn de Sant Josep. Beyond the sandwiches: cazón en adobo, anemone, scallop empanadas, and a natural-wine list that punches harder than the format suggests. The complaint everyone logs is the same — small portions at prices that read more Madrid-at-its-loudest than Eixample-casual. That's fair. You're paying for the jamón de bellota, the theatrical service, and the decision to staff only with waiters who could have been your grandfather. Worth it for the first visit, at least.
