Èlia Caral was a graphic designer before a trip to China turned her into a cook. Dr. Zhang opened in Sant Antoni in 2018 and has since expanded with a second Gràcia location, which tells you roughly how the dumplings have been received. The dough is bona fide homemade, the fillings are made with genuine care, and the variety is the point — duck, mushroom, pumpkin, eggplant, wonton, momo, curry-fried, and a dessert dumpling filled with apple tart that has no business being as good as it is. Dan dan noodles and laksa round out the menu; the vegan selection is unusually strong for this kind of room. Open kitchens mean you watch the folding happen. Prices are excellent value. The small venues fill fast, so book ahead — a caveat that has applied since 2018 and shows no sign of easing.
