Cooperative of about twenty-five members took over the old Bar Copèrnic space on the now-pedestrianised stretch of Consell de Cent and opened Bar Dijous in February 2026 with Joan Vallès in the kitchen — ex-Monocrom under Fermí Puig, ex-Gegant de Poblenou, Time Out's Chef Revelación 2025.
