Bar Dijous opened in February 2026: a gastronomic cooperative of twenty-five on Consell de Cent, with chef Joan Vallès — Time Out's Chef Revelación 2025. The cooking is cuina de mercat with no theatre: capipota €8, weekly legumes €10, macarrons de festa major, fricandó with moixernons, suquet de peix €19, cordero estofado €15, escabeche of cap-roig with ginger off the Llibre de Sent Soví, the chef's ten-years-refined flan to close. Half-portions at fifty percent. Filtered still and sparkling water free, natural wine three euros the glass, half-litre porró seven. Time Out, Ara, El Periódico and Observación Gastronómica all came out within six weeks of opening; the room is three months on the clock and the early reading is steady.
What works
A gastronomic cooperative of twenty-five-odd people running a chef-driven Catalan kitchen at neighbourhood prices on the most-discussed pedestrianised stretch in the Eixample. Joan Vallès brings Monocrom and Gegant pedigree to capipota, fricandó, suquet, escabetx of cap-roig drawn from the Llibre de Sent Soví, a flan he's been polishing for a decade. Filtered water free, natural wine three euros the glass, half-portions at fifty percent. Time Out, Ara, El Periódico and Observación Gastronómica all filed within six weeks of opening — the editorial picture is genuinely warm.
Before you go
Brand-new — opened February 2026, three months on the clock at writing; the kitchen is still bedding in and the press file is entirely opening-frame coverage. Wed–Sun only with no Monday or Tuesday service; Wed and Sun are lunch-only. Front-of-house is deliberately informal in the cooperative register — expect floor service from members, not fine-dining choreography. Terrace is the prize seat and books out fast in good weather. No standalone website; reservations channel through CoverManager.
