Toro sashimi (buttery tuna); ebi furai handroll (tempura shrimp, chili-garlic mayo); acevichado seabass with ají amarillo; seared tuna nigiri. Flambéed eel nigiri finished with molasses, ginger jam, or rocoto chocolate — the late-arriving sleeper.
