Bar Ramón has been holding its corner of Carrer del Comte Borrell since 1939, and that longevity is the first thing you feel walking in. Bo Diddley's guitar hangs on the wall, blues and jazz play from the speakers at volumes that invite conversation rather than shout over it, and Catalan tapas land on the plates with the unshowy confidence of a kitchen that stopped needing to prove anything decades ago. Reservations are by telephone only — the English is limited, the tourist infrastructure is absent, and the soundtrack is better than almost anything the bar across the street will offer. The vermouth ritual fills the room on Sundays; the regulars bring their own rhythm. A Sant Antoni institution that has survived the neighborhood's transformation by quietly refusing to change, and is better for it.
